About the Recipe
Grilled seafood finished with a bright lemon herb oil for balance and simplicity.

Ingredients
Seafood
1 lb mixed seafood (shrimp, scallops, fish fillets, or lobster tails)
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Lemon Herb Oil
⅓ cup olive oil
1 small garlic clove, finely minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh basil or thyme, finely chopped
Zest of 1 lemon
1 tablespoon fresh lemon juice
Pinch of sea salt
Preparation
Preheat grill to medium high heat and oil grates lightly.
Toss seafood with olive oil, salt, and black pepper.
Grill seafood directly over heat, turning once, until just cooked through and lightly charred. Shrimp and scallops cook quickly. Fish should release easily before flipping.
While seafood cooks, combine olive oil, garlic, herbs, lemon zest, lemon juice, and salt in a small bowl. Stir to combine.
Remove seafood from grill and immediately finish with lemon herb oil. Serve hot.
