About the Recipe

Juicy pork skewers grilled over open heat and layered with sweet pineapple, then finished with a smoky BBQ glaze. Each bite balances char, sweetness, and savory depth, making this dish perfect for outdoor cooking, events, or an elevated backyard meal that delivers bold, crowd pleasing flavor.

Ingredients

For the Skewers

  • 1½ lb pork tenderloin or pork loin, cut into 1½-inch cubes

  • 2 cups fresh pineapple, cut into chunks

  • 1 red bell pepper, cut into large pieces (optional)

  • 1 small red onion, cut into chunks (optional)

  • Metal skewers or soaked wooden skewers

For the Marinade

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey or brown sugar

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

For Finishing

  • ½ cup BBQ sauce (use your preferred style)

  • Optional garnish: chopped parsley or green onion

Preparation

  1. Marinate the Pork In a bowl, whisk together olive oil, apple cider vinegar, honey, smoked paprika, garlic powder, salt, and pepper. Add pork cubes and toss to coat. Marinate for at least 15 minutes or up to 2 hours refrigerated.

  2. Build the Skewers Thread pork, pineapple, and optional vegetables onto skewers, alternating for even cooking and color.

  3. Preheat the Grill Heat grill to medium-high heat (about 400°F). Clean and lightly oil grates.

  4. Grill Place skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes until pork is cooked through and lightly charred.

  5. Glaze During the final 2–3 minutes of cooking, brush skewers generously with BBQ sauce, flipping once to caramelize without burning.

  6. Rest and Serve Remove from grill and let rest for 3–5 minutes. Garnish if desired and serve hot.
